Program

The role of Food Hygiene in Safety Assurance. Regulatory bodies in Food Hygiene and Safety. Food Hygiene in the Portuguese and European law. Sanitation. Pest control. Water and air quality. Temperature control and registration. Personnel and their role in Safety Assurance and Food Hygiene. Structures and infrastructures. Preventive maintenance and calibration of equipment and instruments. Waste management. Work methodologies and their translation in regulatory bodies. Auditing for pre-requisites: the process and its preparation.

Teaching Methodologies

The scientific and technical bases of the syllabus are exposed during lectures. To deepen and explore the themes under study, the students carry out guided research and discussion. In practical classes, students work on simulations and case-studies.
